Recipe of the Month
Pesto Sauce:
2 cups basil
1/2 cup parmesan
1/2 cup olive oil
1/3 cup pine nuts
3 cloves garlic...minced
Kosher salt and pepper to taste
In food processor,blend basil,garlic and pine nuts with a few pulses.Slowly add oil.Add cheese,salt and pepper and enjoy. Makes one cup. John McCarthy
Macadamia Stripped Bass: 1/2 cup chopped macadamia nuts 1/2 Panko optional 1 - 2 eggs 3-4 pieces of fish 3 tsp. olive oil 1 tsp. butter Add olive oil and butter to hot pan Stir eggs, dip fish in egg On wax paper, place panko and macadamia nuts Dip fish in macadamia mix Saute each side 5 minutes or until goaled brown
Optional sauce: Lime terriki
